When you have visitors around, these Peach Cobbler Egg Rolls are the perfect treat to make quickly. They’re simple to make and full of juicy peaches. To make them extra special, ice them with homemade vanilla frosting and powdered sugar.

Ingredients

 

  • 10 each egg roll wrappers
  • 4 tablespoons flour, all-purpose
  • 1/3 cup sugar
  • 1/2 whole lemon, juiced
  • 3 1/2 each fresh peaches, whole, med., peeled and chopped
  • 2 teaspoons cinnamon
  • 1/4 teaspoon allspice
  • 1/3 teaspoon salt
  • 1 egg, beaten
  • 1 tablespoon light margarine, melted
  • 2 teaspoons cinnamon sugar, for dusting
  • Instructions

    Preheat the oven to 375 degrees Fahrenheit.
    Set aside a large baking sheet that has been sprayed with nonstick spray.
    Combine peaches, sugar, and lemon in a saucepan. Cook over medium heat until peaches are mushy, then add water.
    Allow the peaches to cool before adding the flour, spices, and salt. Stir until everything is completely blended.
    In a separate bowl, beat your egg.
    Brush the egg wash around the edges of an egg roll wrapper that has been placed on a cutting board. Place about 2 teaspoons of peach filling along one edge of the wrapper, leaving a little border. Fold the sides over and tightly roll up the egg roll. Place it on a baking sheet lined with parchment paper. Rep the previous step as many times as necessary.
    After 20 minutes in the oven, brush each egg roll with melted butter and cinnamon sugar. Bake for a further 5 minutes.
    Serve immediately and enjoy!
