These cheesy French fries are fried to perfection after being dipped in a creamy cheese sauce. In a nutshell, from start to finish, this classic side dish takes less than an hour. They’ll add a festive touch to your holiday spread.

° 2 pounds russet potatoes
° Semi a cup of butter
° All-Purpose Flour Cup
° 2 cups skim milk or half and half
° salt pepper
° 2 1/2 cups shredded fresh cheddar cheese, divided
° Paprika for decoration
° Freshly garlic or chopped parsley for decoration
Preheat the oven to 350 degrees Fahrenheit and spray a 13-inch-by-9-inch baking pan with cooking spray.
A large pot of water should be brought to a boil. Scrub the potatoes and cook them whole for 20-25 minutes in boiling water. It doesn’t have to be totally cooked, but it should be pierced readily with a sharp knife. Remove it from the water, allow it to cool, and then use it.
Make the cheese sauce in the meantime.
In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook, whisking constantly, for about two minutes, or until the flour is golden brown. Cook, stirring frequently, until the milk has thickened, about 23 minutes. Remove the pan from the heat and stir in the shredded cheese. Salt & pepper to taste.
Peel the potatoes gently and slice them into 1/8-inch slices.
Season a third of the potatoes with salt and pepper and arrange in a single layer in a baking dish. About a third of the cheese sauce should be spooned over the potatoes. Repeat the process for two additional layers. Over the top layer of potatoes, pour the remaining cheese sauce. Make sure all of the potatoes are coated.
If preferred, top with 1/2 cup shredded cheddar cheese and 1/8 teaspoon paprika (only for color).
Bake for 20-25 minutes at 350 degrees, or until the sauce has bubbled.
