°1 pound of red potato peelings, available or off based on preference
°1 cup 2% milk
° 2 tablespoons of low-fat cream cheese
° 1 c grated Parmesan cheese
°3 cloves garlic
° 2 tsp green onion, cut into cubes
° Salt & pepper to taste

Boil some water, then slice the potatoes into big chunks, and put them in the pot. About 15 minutes or until the potatoes can be split with a fork.
It is done when the potatoes are done. Add the milk/cream cheese, garlic, and salt to a saucepan over medium heat and stir until the cream cheese melts and the sauce starts to boil. Keep the heat on low until it starts to boil. Then turn it off.
When the potatoes are done cooking, drain them well and mash them. If you want, you can leave some chunks of potato in there.
