Ingredients:
2 Large bags of tortilla chips
1 lb. Ground beef
1 Packet taco seasoning
½ Onion diced
1 Can refried beans
16 oz. Shredded cheese
3 Roma tomatoes diced
2-3 Green onions chopped
Instructions:
Preheat oven to 400 degrees Fahrenheit.
In a skillet over medium-high heat, cook the ground beef and onion until the meat is browned and the onion has softened.
Get rid of any excess fat.
Reduce to a low heat and add the taco seasoning. Continue to cook for a few minutes more.
Place one bag of tortilla chips on each of two baking pans, and cover with half of the refried beans for each batch.
Half of the meat mixture should be sprinkled over each batch of chips, and the cheese should be evenly distributed across the two baking sheets.
Bake until the cheese has melted, about 10-15 minutes.
Serve immediately with a garnish of diced tomato and green onion.
