2 tablespoons butter
8 slices rye bread
8 slices deli sliced corned beef
8 slices Swiss cheese
1 cup sauerkraut, drained
½ cup Thousand Island dressing
Preheat a medium-sized skillet or griddle to 350°F.
Butter one side of the bread slices lightly. Spread Thousand Island dressing on the sides that haven’t been buttered.
Layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut, and a second slice of Swiss cheese on 4 slices of bread. Top with the remaining buttered bread slices.
Sandwiches should be grilled until golden brown on both sides, about 5 minutes per side. Serve immediately.
