1 box fudge brownie mix (19.5 ounce or family size)
1/4 cup butter melted
4 oz cream cheese softened
1 large egg
1 cup powdered sugar
1 cup creamy peanut butter
4 ounces semi-sweet chocolate chips
Preheat the oven to 350 degrees Fahrenheit. Combine the brownie mix, butter, cream cheese, and egg in a medium mixing bowl. It’ll be a little sticky with the dough. Make roughly 24 cookies by scooping the dough onto an ungreased cookie sheet. To make a circular cookie, smooth the edges of each one.
In a separate dish, whisk together the powdered sugar and peanut butter until smooth. Make 1 inch balls out of the mixture. Make sure each cookie has its own ball. Remove from the equation.
Bake for 12 minutes for the cookie dough, keeping an eye on it to make sure it doesn’t overheat or undercook.
Press a peanut butter ball into the center of each cookie as soon as they come out of the oven. It’s fine if the peanut butter mixture softens slightly. Allow the cookies to cool for 5 minutes before transferring them to a wire rack to finish cooling.
In a microwave-safe bowl, melt the 4 ounces of chocolate for 30 seconds. Stir the chocolate and continue to melt for another 15 seconds, or until it is completely melted. Place about 1/2 a spoonful of melted chocolate on top of each cookie, making sure the peanut butter ball is completely covered. Allow time for the chocolate to set. Keep the container sealed.
