+For the whipped cream:
°1 cup (113 g) brick cream cheese, diced °¼ cup (32g) Redpath® Icing Sugar °2 tbsp. 1/2 tsp (10 mL) pure vanilla extract °1 cup (250 ml) heavy cream
°Lemon zest, finely grated °fresh strawberries °Fresh basil leaves Methods For the strawberries:
1st step Combine strawberries, white balsamic vinegar, Redpath® Brown Sugar, salt, and black pepper in a large mixing basin. Stir until the brown sugar is completely dissolved and the strawberries are equally coated. Cover and set aside for 30 minutes at room temperature, stirring every 10 minutes.
Step two Remove the macerated strawberries from the bowl with a slotted spoon. To make a reservation. – Third step Fill a heavy-bottomed saucepan halfway with the liquid (balsamic plus the juice released by the strawberries) and heat over medium heat. Bring to a boil, then turn off the burner. Simmer for 8 to 10 minutes, or until the sauce has reduced and thickened.
4th step To the balsamic reduction, add 112 cup (216 g) macerated strawberries. Allow the strawberries to soften and release their juices without crushing them. Cook, stirring periodically, until the mixture thickens, about 5 minutes.
Step 5 Take the pan off the heat and drizzle the balsamic reduction over the remaining strawberries. Gently whisk in the lemon zest. Set aside and allow to cool. Allow to chill entirely in the refrigerator. To make the whipped cream, combine the following ingredients in a mixing bowl. 1st step Add the cubed cream cheese and Redpath® Icing Sugar to the refrigerated bowl of a stand mixer fitted with the whisk attachment. On medium speed, beat cream cheese until it is smooth and consistent. Add the vanilla extract to the mixture. Whip the cream cheese for 30 seconds on medium-high speed to give it a fluffy texture and remove any lumps. Scrape down the bowl’s side.
Step two Pour the heavy cream down the edge of the bowl while whisking on medium speed. As you continue, slowly incorporate the cream into the mixture. Increase the speed to medium-high and beat until stiff peaks form after all of the heavy cream has been added. Do not overmix the ingredients.
Step 1: In the bottom of the glasses, put a layer of balsamic strawberries. 2nd step Spread a layer of whipped cream on top of the strawberries. Rep until the glasses are completely full. Step 3 Garnish with lemon zest, fresh strawberries, or basil leaves, if preferred. Serve right away or keep refrigerated until ready to use. Have fun!
