This banana cream pie recipe is on a mission to capture my heart, and I’m loving it! What I mean is that it doesn’t matter whether it’s an old recipe passed down from my grandma; it still has style. You’ll need the following items to make this recipe:
INGREDIENTS:
1 (9 inch) pie crusts, baked
3 cups whole milk
3⁄4 cup white sugar
1⁄3 cup all-purpose flour
1⁄4 teaspoon salt
3 egg yolks, slightly beaten
2 tablespoons butter
1 teaspoon vanilla
3 bananas
DIRECTIONS:
Prepare a cooked 9-inch pie shell.
Scald the milk in a big saucepan.
Combine the sugar, flour, and salt in a separate pot; gradually mix in the scalded milk.
Cook, stirring regularly, until the sauce has thickened over medium heat.
Cook for another two minutes, covered, stirring periodically.
Prepare the 3 egg yolks in a small bowl, slightly beaten; stir a tiny portion of the hot mixture into the beaten yolks; stir yolks into hot mixture until well incorporated.
Cook for a further minute, stirring regularly.
Remove the pan from the heat and stir in the butter and vanilla extract.
Allow to cool until lukewarm.
Slice bananas and scatter in pie shell when ready to pour; pour warm mixture over bananas.
Make a meringue to top the pie if desired (you’ll have 3 egg whites leftover), or just let it cool until serving.
