°Apples or applesauce 3

1Cut apples into tiny wedges and place in a saucepan Add a little water and simmer over low heat until the apples have softened into a compote and the liquid has evaporated.
2Remove the pan from the heat and finely grind everything with a spoon. Use a food processor instead of a blender. It would be less appealing and more difficult to keep contained in the slipper. To taste, add cinnamon and sugar.
3Prepare the puff pastry by rolling it out, cutting circles, and moistening the edges. Fill the inside with a generous spoonful of compote and fold the edges down tightly.
4Brown with a mixture of egg yolk and milk.
Preheat the oven to 230°C (thermostat 8) and bake for 15–20 minutes.
