This is fantastic. My grandmother, who was from Ireland, used to make this dish frequently. It always reminds me of her when I cook it. I hope you find it enjoyable.
INGREDIENTS:
3-4 large potatoes
1 onion sliced
oil for frying
green onion garnish
salt and pepper to taste
INSTRUCTIONS:
1. Take the first step.
Peel the potatoes and finely slice them into 18″-14″ thick slices.
Step two:
In a seasoned fry pan or nonstick pan, heat the oil. Place the potatoes in the heated oil with care. Keep it out of the sun.
Step three.
Potatoes should be fried until crispy, about 20-25 minutes. Instead of stirring potatoes quickly, delicately flip them over, trying to keep them intact and not mushy.
Step four.
Add the sliced onions to the potatoes just before they start to crisp up, and continue to simmer for another 5 minutes.
Step five.
Season with salt and pepper, as well as a garnish of green onions, and stir gently to combine the seasonings while keeping the potatoes as intact as possible.
Step six.
Serve with ketchup and green onions as a garnish.
