2 lbs Ground Chuck
1 Yellow Onion thinly sliced
16 oz mushrooms I used a blend of cremini and shitaki
2 cups beef broth – divided. I use canned fat-free low sodium
2 tbsp all-purpose flour
6 tbsp butter
4 sliced scallions white and green sections
salt and pepper to taste


Make 6 equal-sized patties out of the meat. Season each side liberally with salt and pepper.
2 tablespoons butter, melted in a skillet Cook, stirring occasionally, until the onion and mushrooms are browned. Remove the pan from the heat and set it aside.
In the same skillet, melt 2 more tablespoons of butter and sear the beef patties for 3 minutes on each side or until they reach 120°F. Remove the pan from the heat.
In the same skillet, melt the remaining 2 tablespoons of butter. Add 112 cup beef broth to the pot. Bring to a low simmer and add the flour, whisking constantly. Cook until the sauce has thickened. Add the remaining 1/2 cup of broth if the gravy becomes too thick.
Return the meat patties, mushrooms, and onions to the simmering gravy. Season with salt and pepper to taste. Cook until desired level of doneness is reached.
Serve with chopped scallions as a garnish.
