Meatloaf with Mashed Potatoes and Cheese Recipe?


  • 1 1/2 pounds Ground Beef , (85/15)

  • 1/4 yellow onion , finely chopped

  • 2/3 cup seasoned dry breadcrumbs

  • 1/3 cup whole milk

  • 1 large egg , lightly beaten

  • 1/2 teaspoon Kosher salt

  • 1/4 teaspoon coarse ground black pepper

  • 2 pounds potatoes , peeled and cut into 1″ chunks

  • 1/3 cup  unsalted butter

  • 1/2  cup  whole milk

  • 1 teaspoons  kosher salt

  • 1/4  teaspoon  coarse ground black pepper

  • 1/2 cup bacon bits , cooked and crumbled

  • 1 cup cheddar cheese , shredded

How to Make Mashed Potato and Cheese Meatloaf:

Preheat the oven to 375 degrees Fahrenheit.
Gently combine meat, onion, breadcrumbs, milk, egg, salt, and pepper in a large mixing basin, then press into a 9×9 baking dish.
Cook for 15 minutes uncovered, then remove and drain any excess fat.
Add potatoes to a pot with just enough water to cover and bring to a boil over high heat while the meatloaf is cooking. 15 minutes in the oven
Drain the water and combine the milk, butter, salt, and pepper in a mixing bowl until smooth.
Top the meatloaf with the sauce, cheese, and bacon.
Bake for 15 minutes more, or until the bacon is sizzling, the cheese is bubbling, and the mashed potatoes are slightly crunchy.
