Ingredients

+Cheesecake

°25 vanilla wafers

°¾ cup toasted and salted almonds

°4 tbsp. tablespoons (½ stick) unsalted butter, melted

°½ cup and 2 tbsp. granulated white sugar

°1 ¾ cup fresh cream, chilled

°1 packet (7 g) unflavored gelatin

°1 ½ cups plain Greek yogurt

°1 pkg. (226 g) original brick cream cheese, at room temperature

°2 tbsp. pure vanilla extract

°¼ tsp. kosher salt

+Raspberry filling

°2 tbsp. granulated white sugar

°1 C. light rum

°2 tbsp. lime zest

°2 cups of fresh raspberries

+Blackberry filling

°2 tbsp. brown sugar

°2 tbsp. tablespoon fresh mint, chopped

°1 C. bourbon

°¼ tsp. pure vanilla extract

°2 cups fresh blackberries, lightly crushed

+Blueberry filling

°2 tbsp. granulated white sugar

°2 tbsp. lemon zest

°1 C. lemon juice

°2 cups of fresh blueberries

+Strawberry filling

°2 tbsp. white sugar

°2 tbsp. tablespoons chopped fresh basil

°1 C. balsamic vinegar

°2 c fresh strawberrie

Preperation:

12 to 14 times in a food processor, crush wafers and almonds until finely ground.
2 tbsp. sugar and 2 tbsp. butter Mix everything up thoroughly.

Press the mixture into a 9-inch springform pan.
20 minutes in the freezer
Pour the cream into a medium saucepan.
Gelatin should be sprinkled on top.

Allow for a 10-minute rest period.
Cook the cream mixture over medium-low heat, stirring frequently, for 4 to 6 minutes, or until the gelatin is dissolved.
Allow 10 minutes for cooling.

In a clean food processor, combine the yogurt, cream cheese, vanilla, salt and remaining sugar until smooth.

Stir in the cream mixture. Mix until homogeneous.

Pour filling into the mold also smooth with rubber spatula.

Cover with plastic wrap and refrigerate until firm, at least 6 hours or up to 2 days.

When the cake is ready, run a knife around the sides of the mold and remove the sides to unmold it.

Serve with desired berry garnish.

Toppings

To make toppings, combine desired topping ingredients.

Stir in desired berries.

Leave to macerate, stirring occasionally to obtain a syrupy mixture, about 20 minutes.
