Ingredients:
8 medium fresh beets
1 cup vinegar
1/2 cup sugar
1-1/2 teaspoons whole cloves
1-1/2 teaspoons whole allspice
1/2 teaspoon salt
Directions:
Scrub the beets and trim the tops to 1 inch. Fill a Dutch oven halfway with water. Bring the water to a boil. Reduce heat to low and cook, covered, for 25-30 minutes or until vegetables are soft. Remove from the water and set aside to cool. Beets should be peeled and sliced, then placed in a bowl and set aside.
Combine vinegar, sugar, cloves, spices, and salt in a small pot. Bring to a boil, then reduce to a simmer for 5 minutes. Pour the liquid over the beets. Refrigerate for at least 1 hour before serving. Drain the water before serving.
