1/2 cup butter softened
1 cup sugar
2 large eggs
1 very ripe banana mashed
8 ounces crushed pineapple (do not drain)
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup shredded coconut
Preheat the oven to 350 degrees.
In a large mixing basin, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Combine the mashed banana and pineapple in a mixing bowl.
Sift together flour, baking powder, baking soda, and salt in a separate medium-sized mixing basin. Combine with the wet ingredients.
Shreds of coconut flakes are added last.
Fill a greased loaf pan halfway with the batter (9 x 5) Preheat oven to 350°F and bake for 60 minutes, or until toothpick inserted in center comes out clean.
